The estate traces back to 13th century Carthusian monks and still ages its wines in their cold stone cellars, but the farming is thoroughly modern minded: biodynamic, certified by both Demeter and Ecocert, with the family preparing their own treatments. This is a topped up, non oxidative Chardonnay
