Bailly Lapierre works out of a former limestone quarry in Saint Bris, cellars deep underground that hold the cool, steady conditions these wines love, drawing fruit from hundreds of growers across the Yonne. The Brut Reserve blends the appellation's four grapes, Pinot Noir, Chardonnay, Gamay, and Aligote,
